Roasted Garlic Aioli

5 cloves of roasted garlic
1/4 cup lemon juice
2 large egg yolks
14 oz extra virgin olive oil
1 tsp. kosher salt
1/4 tsp. ground white pepper

Add all ingredients to food processor EXCEPT olive oil

Puree until smooth

While the food processor is running, add a few drops of olive oil to form an emulsion

Once emulsion has been formed slowly drizzle in the remaining olive oil

Check for seasoning, you may need to add more salt and pepper to your liking
