Sautéed Crimini Mushrooms

2 Tbsp. extra virgin olive oil
1 tsp. unsalted butter
1 large clove of peeled garlic
1 sprig of fresh thyme
8 oz crimini mushrooms
Black Pepper                         to taste
Kosher Salt                            to taste

Slice mushrooms 1/8” thick.

Preheat a medium skillet over medium-high heat.

When skillet is hot, add olive oil and heat the oil until you can see it ripple across the surface of the pan when it is slightly tilted.

Add mushrooms to pan and spread out in an even layer.  Season lightly with salt and pepper.

At this point the mushrooms may absorb all of your oil and leave you with a dry pan.  Add a little more oil if you need it.

Cook on one side until mushrooms are caramelized.

Flip mushrooms over and cook until caramelized on the other side.

Add butter to the mushrooms. Bruise the thyme with the palm of your hand, slightly crush the clove of garlic and drop it onto the butter.

Stir everything together and taste for seasoning.
