Ingredients:
4 medium sized red onions
1 cup white vinegar
1 cup water
2 Tbsp. kosher salt
4 tsp. sugar
1 Tbsp. whole black peppercorns
2 bay leaves
Method:
Peel and thinly slice the onions and separate into rings
Combine sugar and water in a small sauce pan, heat just until sugar is dissolved
In a bowl, thoroughly mix the salt with the onions
Add vinegar and peppercorns to the onions
Add the sugar-water mixture and the bay leaf to the onions
Toss everything together and pack into a container for at least 12 hours before using
