This creamy basil ricotta spread has a variety of uses. Try it as a substitute for mayo on a sandwich or add a generous spoonful to the top of your favorite pasta dish. My favorite is to spread it on a piece of grilled bread and drizzle the top with olive oil. Sprinkle on a few chili flakes or chili flavored olive oil to spice it up a bit.
1 15 oz container Italian style Ricotta cheese
4 large basil leaves
1 large clove of garlic, minced
2 Tbsp. extra virgin olive oil
Kosher salt to taste
Black Pepper to taste
Stack the basil leaves on top of each other and roll them together. Slice them across as thinly as possible.
Combine the basil and the remaining ingredients in a small bowl. Taste it and see how you feel about it
Chill for at least an hour before using to let the flavors come together.
